Hi everyone, thank you for landing on our Eco Guide blog. I hope you will find this post interesting, and that it will inspire you to begin cooking more vegan recipes.

In honour of World Vegan Day, I want to share my top favourite vegan recipes that I have been loving lately. Each recipe is from a different vegan food blogger/youtuber/influencer and is a different style of food. I hope you enjoy!

Pick Up Limes - 3 Tofu Recipes

Pick Up Limes is a vegan blog and youtube channel run by Sadia. The quality of everything that she and her team does is top notch, not to mention that her calm demeanour and detailed content makes trying out new vegan recipes easy, stress-free and interesting. I personally love the Spicy Garlic Tofu recipe on top of a ramen noodle stir fry.

Niomi Smart - Creamy Vegan Pesto Pasta

A few months ago, my husband found the Eat Smart cookbook by Niomi Smart at a thrift store, and we’ve been loving all of the unique vegan recipes she has in there. Some of the recipes can be a bit time consuming, by this delicious Creamy Vegan Pesto Pasta is quick and delectable.

  1. Creamy Vegan Pesto Pasta

If you don’t have some of the ingredients, such as pine nuts, you can substitute them for cashews or walnuts. I also personally like my pasta with a tonne of veggies, so feel free to add your own concoction of veggies like zucchini, peas and spinach.

Cookie and Kate - Fresh Spring Rolls

I’ve made many variations of these fresh spring rolls, but this Cookie and Kate recipe is a great starting place. Cookie and Kate has so many great vegan recipes on their site that I’ve tried over the years.

  1. Fresh Spring Rolls with Peanut Sauce

I’d recommend the following substitutes:

  • Sub the fresh mint for fresh basil

  • Add chopped peanuts to your peanut sauce and forego the sugar/maple syrup

  • Add avocado (yum!)

Minimalistbaker - Vegan Quinoa Tacos

I was excited to try out this taco recipe by the Minimalist Baker because it doesn’t have any tofu/soy in it! Sometimes you don’t want to always have tofu as a meat replacer, so quinoa is a great alternative. I love the crispiness from baking the quinoa. You can easily pre-make the quinoa and quickly throw together tacos, burritos or burrito bowls throughout the week with whichever toppings you have available.

    Loving It Vegan - Vegan Pumpkin Pie

    I’ve been loving the Loving It Vegan blog so much, especially for vegan baked goods. They don’t fall apart. They taste great. And they’re vegan! I’ve added a few recipes below that I’ve personally tried and turned out delicious.

    3. Vegan Vanilla Cake

    I made the Vegan Pumpkin Pie for Canadian Thanksgiving and substituted the flaky crust for a graham cracker crust made with coconut oil. Find any graham cracker crust recipe and substitute the butter for either coconut oil or vegan butter.

    Nora Cooks - Vegan Chocolate Brownies

    Nora Cooks also has some pretty great vegan baked recipes, and this chocolate brownie is one of them! It’s moist, chocolatey and stays together like a regular brownie made with eggs. Highly recommend.
